This elegant and enjoyable coffee boasts a clean cup at whatever roast level you choose. The medium roast level features an abundance of berry/fruit flavor, honey sweetness with a vibrant citrus acidity. At the dark roast level, the acidity falls off and the cup becomes much more mild. While it keeps the berry/fruit flavors, we see the addition of smooth roast flavors and soft floral notes. The loss of acidity allows the sweetness of this coffee to shine. We recommend this coffee be brewed using a pour over, French press, or other steeping methods. Not recommended for espresso.

This coffee is also naturally processed. Normally coffee has the fruit of the berry removed from the bean before any drying or fermenting takes place. However, a naturally processed coffee begins the drying stage with the fruit intact. This imparts more of the berry's flavor to the final product. It's also more environmentally friendly as it cuts down on the amount of water used during processing.
