Peruvian Pepper Mix – Dried Flakes

A blend of Lemon & Orange drop peppers together with the Red Brazilian Starfish, in one bag. Ají Limon, is a hot, citrus-like, Lemon-flavored pepper with a delicate Lemon aroma. The Orange drop pepper, is a hot, citrus-like, orange-flavored pepper with a delicate orange aroma. The Brazilian Starfish originated in Peru and has a sweet floral flavor. They are all popular seasoning peppers in Peru. Chop or use whole in a stir-fry. Possible, but not tested, Scoville scale: 15,000-30,000 SHU units for the mixed dried peppers.

Dried & Flaked they are best blossomed in oil as a stew base. Dehydrated, they can be revitalized by a 15 minute soak in water, vinegar or a combination of both. Save the liquid for the sauce.
