Production Practices
At WH Yardbirds we specialize in raising chickens pasture centered, no antibiotics or hormones, non GMO and non soy feed. Our chickens are raised in our signature chicken tractors that are moved on a regular basis. The doors are opened during daylight hours to let the chickens roam and forage on the land. We believe in raising our chickens in the utmost humane way. Our chickens are happy chickens that taste great. We are a family operation consisting of three generations. I was raised on a farm and ranch in the panhandle of Texas and have a degree in agriculture economics. I have been married to my wife and partner Nancy for 45 years. Nancy was raised on a dairy and poultry farm in central Texas and will be involved in daily decisions and chores. I also have 30 years’ experience in the food service industry that gives me a good understanding of our food system. That is why we are a small family farm, not a factory farm. We specialize in quality, not quantity of product produced. We focus on a smaller bird than the factory farms, our goal is a 5 to 6 pound live bird to give us a 3.5 to 4.25 pound whole dressed chicken. The smaller and younger the bird, the more flavorful and tender the eating experience. This process will be achieved in approximately 7 to 8 weeks. Our chickens are harvested at a USDA inspected facility.
The second generation is my son Wade. He has a degree in agronomy and is in charge of our pasture management. No herbicides or pesticides will be used on our pasture for our chickens. His wife Connie of 18 years is also involved in daily operations
The third generation is my grandson, Wade and Connie’s son. Connor is currently in high school and attending a Vo-tech welding program. He is not only our builder and welder; he is involved also in daily operations.
