Description

Our aged raw gouda is inspired by my training from a Dutch cheese master. It has a beautiful nutty flavor with just the right amount of sweetness that comes from aging. It sits in our cheese cave for at least three months, sometimes much longer. Like any great artisanal cheese, one wheel never completely mimics another.
