About

Liberated Foods runs the only top eight plus allergen food eatery in Seattle, called Askatu Bakery, in the Belltown neighborhood. A dedicated facility, we exclude wheat/gluten, dairy, eggs, soy, peanuts, tree nuts (except coconut), fish, shellfish, sesame, corn, and potatoes from our foods, as well as artificial ingredients and GMOs. When possible we use seasonal, organic, and local ingredients. Our recipes were born out of love and necessity to accommodate the dietary needs of our daughter who was born with over 50 food allergies. We are constantly trying new foods and tweaking old recipes to be the best they can for our family and yours. We try to make food that everyone can eat and love!

Production Practices

All of our products are made in a dedicated bakery with top eight allergen free and gluten-free ingredients, sourced as much as possible from certified gluten-free manufacturers. The only "nut" we use in select products is coconut. We also try to source organic, seasonal, and local ingredients when possible, and never knowingly use GMOs or artificial ingredients.

Estela D Martinez
Estela is founder and Head Foodie of Liberated Foods. It is because of her children's and most specifically her older daughter's food allergies that she learned how to create allergen free baked goods and other foods. She loves exploring new foods and cultures and incorporating them into her creations when possible. A native of Seattle, Estela is a graduate of Seattle University and holds a master's in public health from the University of Michigan, Ann Arbor.
