Description

Our Orchard Series Ciders are fermented primarily from Finnriver’s estate-grown, organic cider apples and pears, with occasional appearance of apples from our network of small regional orchard allies. These ciders aspire to celebrate the soils, waters and maritime climate of the Chimacum Valley, along with presenting elegant variations on the classic cider.

Black Oak
Sweetness: Medium-Dry
Aroma & Flavor: Smells deliberately of black currants, dark fruit, wine-like. Piercing acidity zings through delivering the fruity notes along with complicated rolling bitters, green, sharp apple, notes of vanilla and smooth out breath of wooded caramel to the finish.
Apple Varieties: A select blend of homegrown Certified Organic Golden Russet cider apples from the Finnriver Orchard, Hudson Golden Gem apples from Ashland, OR, apples from Iron Root Orchards in Okanogan, such as Winter Pearmaine, Winesap, and Arkansas Black, and a range of locally harvested homestead fruit from the Olympic Peninsula.

Blue Hewe
Sweetness: Brut, bone dry.
Aroma & Flavor: Smells of leather and tart fruit, hay bales and wine. Roving acids carry notes of sweet pear and caramel. Strikingly sharp, creamy texture and long in the finish.
Apple Varieties: Finnriver homegrown organic Hewe’s Virginia Crab and William’s Pride, and a touch of Finnriver Farm organic blueberries.

Fire Barrel
Sweetness: Semi-dry
Aroma & Flavor: Vaporous woody spice leads the nose into a caramel cream soda with a light and gently acid mid-pallet followed with the classic bittersweet apple tannin closure- bitter, leather, astringent, with a phenolic outbreath.
Apple Varieties: 100% Finnriver Orchard organically grown cider apples such as Chisel Jersey, Brown Snout, Harry Master’s Jersey, Medaille d’Or, Frequin Rouge, Nehou and Yarlington Mill.

Golden Russet
Sweetness: Semi-Dry
Aroma & Flavor: Aromas of pears and white wine, a bit of cucumber and grapefruit rind. This cider hits the pallet with flowing acidity around the mouth with a background of earthy bitters to hold the acidity in check, clean and crisp with a lingering pithy finish.
Apple Varieties: Made with a blend of traditional ‘russeted’ organic apples grown on Finnriver's Organic orcahrd inclusing Golden Russet, Ashmeads Kernal, Karmijn de Sonneville, Belle de Boskoop, Claygate Pearmaine, plus some organic Golden Russet apples from Ashland, Oregon.

Perry
Sweetness: Semi-sweet
Aroma & Flavor: Nose of wine and sweet pears, with a pleasant, round grapefruit note and a heart of clean, tannic pear. Bright and quenching.
Pear Varieties: Hendre Huffcap, Yellow Huffcap, Romanian Perry grown in Finnriver’s organic orchard and wildcrafted seedling pears from the Olympic Peninsula.
