Farmstead
Sweetness: Semi-sweet
Aroma & Flavor: An earthy, amber-colored cider with an aroma of warm bread and sweet apple. Offers a rustic taste of the ripe orchard and hearty homestead cider tradition. Nutty with a sharp acidity that balances a gentle tannic finish. Unfiltered lees lend body to this cider.
Production Notes: We conduct a number of different ferments with different yeast strains to harvest subtleties from each and combine together for a cloudy yet clean farmhouse cider. Sweetened with organic cane sugar. This cider is lightly filtered to maintain rustic character and earthy finish. Lightly carbonated. Contains no gluten ingredients.

Oak & Apple
Sweetness: Semi-dry
Aroma & Flavor: A foundation of bright citrus in this cider is layered with a smooth whiskey depth and spicy rye spirit. A fine, craft cider that showcases American oak, Northwest rye whiskey, and Washington organic apples. Woody astringency balances the acidity, and then finishes with lovely toasted oak and vanilla notes.
Production Notes: Fermented in stainless steel tanks at low temperatures to capture the full ester profile of the apples. Once fermentation is complete, this cider is then aged for 12 to 15 weeks in whiskey barrels from Woodinville Whiskey in Washington and High West Distillery in Park City, Utah. The oak gives the cider a liquid gold color. Sweetened with organic cane sugar.

Sweetness: Semi-sweet

Production Notes: We ferment this cider in two batches, with one strain of Belgian-style abbey yeast, at high temperatures. Combined, these ferments present the archetypal Belgian beer nose of tropical fruit with hints of spice and pepper.

Sweetness: Dry
Aroma & Flavor: This cider begins with aromas of unripened olives up front, offers slightly briny notes on the mid palate, and then finishes with gentle nuances of bitter oak and pine needles. Cloudy in the bottle and the keg, the Spanish generally take their cider un-carbonated and at room temperature; we bend a little and give this a gentle bubble while allowing the lees to persist and deepen the nutty bitterness.
Production Notes: A Spanish style cider fermented with open head space in the tank allowing exposure to oxygen, which promotes the wild vinegar bacteria that provide the pungent acetic nose these ciders are famous for. This cider carries an acidity from tart culinary apples and a finishing astringency from a touch of oak. Fermented with oak and lightly sweetened with organic cane sugar.
