We are a small family farm run by mother-son team Elizabeth and Mark (with lots of help from our outstanding staff). We raise 40 Jersey cows on a mostly grass-based diet and make raw cheese by hand from their milk. We age the cheese for two months to a year or more in our underground cave.
Pastured Free Range Holistic Management
We raise our cows humanely on a grass based diet. Every cow is named; we lavish love and attention on them and they reward us with delicious, rich milk. We work with a nutritionist to analyze our pastures and hay every season, and we supplement the grasses with minerals and a small amount concentrate to keep the cows healthy.
