About

Tails & Trotters is the region's original & premier producer of hazelnut-finished pork, with the goal of developing a truly Northwest prosciutto. Based in Portland, Oregon Tails & Trotters markets its exclusive heritage-breed hazelnut-fed pork and charcuterie (cured-meat products) to restaurants and retail outlets. “Tails & Trotters” is a playful reference to the philosophy of using the whole pig - we produce over 100 products from our hazelnut-finished pigs, from fresh butchery cuts to cured meats to pantry staples. T&T operates its own retail butcher shop & sandwich counter. Fresh butchery, sausages & hams are distributed to restaurants in Portland, Seattle & nationally.

Production Practices

Antibiotic And Hormone Free Non Gmo

Pigs are raised by Pure Country Pork in Ephrata WA under 3rd party certification by Food Alliance. T&T provides all nuts & detailed proprietary finishing program to PCP detailing the final 70-90 days of production. Slaughter is done under USDA-Inspection in Moses Lake, WA. ALL Butchering/packaging done by T&T under USDA-Inspection at facility in Portland. Hazelnuts are purchased from George Packing & shipped to Pure Country Pork in Ephrata. Pure Country raises pigs under Food Alliance Certification, and T&T provides a specific & detailed finishing program for the final 60-100 days.
