Paula Lambert fell in love with fresh
mozzarella while in Italy and decided
to bring the art of cheesemaking
home to Texas. Since 1982, Mozzarella
Company has made award-winning
cheeses the old-fashioned way: by
hand. Using fresh Texas milk and the
finest ingredients, Mozzarella Company
consistently produces cheeses that are

Mauricio Travesi is President of the Mozzarella Company. And he is also an award-winning artist and a pilot. He worked as Creative Director at Young and Rubicam where he created television commercials. He joined Aeromexico as a pilot in 1984 and Mexicana Airlines in 1992. In 1995 Mauricio moved to the US and worked at Mozzarella Company for three years. In 1999 he returned to Mexico and joined Aviacsa Airlines as a Captain. He returned to the Mozzarella Company in 2013, where his Italian heritage serves him well and he uses his creative and organization skills to manage and keep Mozzarella Company in Dallas running smoothly.
