Shelby and Christian both have extensive experience as sous chefs in some of the best kitchens of Washington, D.C., Maryland, and Virginia. Due to Covid-19 layoffs in the industry, they decided to forge ahead on their own path in the food world. Having recently changed their personal lifestyle and eating habits for the better, the decision was made that their food should represent that. With backgrounds in French, Japanese, Italian and Modern American, and then meeting in an Israeli/Indian dual concept, their focus and concept is heavily based in Middle Eastern/North African cuisines which highlight vegetables and grains.
