About

As a first generation Tampeño born and raised in West Tampa it was always important to my Abuela that we held on to our Cuban heritage and our traditions. My abuela had a passion for cooking, she would spend countless hours over the stove preparing the perfect meal. The smell of sazon would permeate the casita, the cazuelas would pile high over the kitchen sink, and la familia would gather around the dining room table. No meal of hers would ever be complete without her signature desert, Flan.

I loved my abuelitas cooking however I was a picky eater and didn’t care for flan. This is where my mom stepped in and using my abuela's flan recipe tried something new. Knowing that I was obsessed with peanut butter she mixed some into the flan batch, and thus turned me into a “Flanatic”. That’s when we started to infuse different ingredients into the recipe and explored with a multitude of flavors. It became such a hit among family and friends that when my parents owned and operated Happy Fish, a Cuban seafood restaurant located in West Tampa, it became a staple on their menu. After selling the restaurant in 2009, my mother continued to make flans for the family and occasionally we had customers reaching out to buy her flans, but with a fulltime job it was hard to keep up with the demand.

After my grandmother passed in 2014, we would always find ourselves reminiscing about the many family dinners she hosted and the evolution of her flan. It was in 2016 when I decided to honor her and keep her legacy alive by introduce to the world Flan Factory, hand crafted artisanal flan with over 30 varieties of flavors that would make a flanatic out of anyone.
