Kakigōri is a traditional Japanese dessert that’s both exacting and amenable to interpretation. Originating in 11th Century Japan, Kakigōri was a supreme luxury for the nobility of the day. Crystal clear ice of impeccable purity was brought down from the mountains during the coldest part of winter and stored in special facilities. During the summer these blocks were shaved by hand with an incredibly sharp knife and served with a sweet sap made from such ingredients as kudzu, ivy, hydrangeas, honey and crushed plums.We pay homage to these traditions by sourcing an incredibly pure handcrafted ice from a craft cocktail ice supplier.
Kakigōri and its accompanying flavors produce an alchemization of nature. Fruits, flowers, herbs and tea are deconstructed, reimagined and reconfigured against the delicate canvas of perfectly shaved ice.
A devotion to craft and quality is embodied in our ingredients, our sourcing partners and our presentation of this beautiful idea in edible form. Ingredients are located as close to the earth as possible. All are carefully sourced to be free of pesticides or chemical fertilizers and grown in rich biodiverse environments. Whenever possible we source ingredients close to home. Natural sweeteners include organic dehydrated cane juice, raw agave and Florida wildflower honey. We partner with local purveyors of dairy, produce and coffee as well as importing tea from heritage producers in Japan, Taiwan and China.
We view Kakigōri as the perfect modern canvas for innovative flavors, ingredient combinations and aesthetics.
